Moroccan Lamb Chops

With just a touch of spice, these chops cook in minutes and yet are elegant enough for company. Serve with rice pilaf or couscous.

Yield: 4 servings


Ingredients

1/2 teaspoon ground cumin
1/2 teaspoon sweet paprika
1/4 teaspoon fresh ground pepper
1/4 teaspoon cinnamon
1 1/2 teaspoons Kosher salt
8 lamb rib chops or 4 loin chops (about 1 pound)
1 tablespoon vegetable oil


Method

In a small bowl, mix the spices with salt. Pat the spice mixture onto the chops.

Heat the vegetable oil in a skillet large enough to hold all the chops. Add the chops and cook over moderately high heat, turning once, for about 6 minutes total for medium-rare (longer if using loin chops). Let chops rest for 1-2 minutes before serving.
